Activate Yeast
In a small bowl, combine warm water, granulated sugar, and active dry yeast. Let sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Add the yeast mixture and stir until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Shape Pretzel Bites
Preheat the oven to 450°F (230°C). After the dough has risen, punch it down and divide into small pieces (about 1 oz each). Roll each piece into a rope and cut into bite-sized pieces.

Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Drop in the pretzel bites in batches for about 30 seconds each, then remove and place on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes, or until golden brown.
