    Prepare the Home Fries

    Wash and dice the potatoes into small cubes. Heat olive oil in a large skillet over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

    Cook the Meat

    In a separate skillet, cook your choice of meat (bacon or sausage) over medium heat until fully cooked and crispy. Remove from the skillet and let drain on paper towels.

    Cook the Eggs

    In a bowl, whisk the eggs and season with salt and pepper. In the same skillet used for the meat, melt butter over medium heat. Pour in the eggs and cook to your desired doneness, stirring occasionally for scrambled, or leaving them intact for fried or sunny-side-up eggs.

    Toast the Bread

    While the eggs are cooking, toast the slices of bread until golden brown. You can butter the toast for added flavor if desired.

    On a large serving platter, arrange the cooked eggs, home fries, your choice of meat, and toasted bread slices. Serve hot.
