    Prepare the Sirloin

    Thinly slice the premium sirloin against the grain and season with salt and black pepper.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, green bell peppers, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Sirloin

    In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned sirloin and cook over medium-high heat for 4-5 minutes until browned and cooked to your desired level of doneness.

    Combine Ingredients

    Return the sautéed vegetables to the skillet with the cooked sirloin. Stir to combine and heat through for an additional 2 minutes.

    Melt the Cheese

    Place the American cheese slices over the meat and vegetable mixture. Cover the skillet for 1-2 minutes, until the cheese is melted.

    Assemble the Sandwich

    Split the 8" sub rolls and fill each with the sirloin and cheese mixture. Serve immediately while hot.
