Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or pot, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off before carefully placing it into the hot oil.

Fry the Onion Rings
Fry the onion rings in batches, cooking for about 2-3 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
