    Prepare the Base

    In a large pot, combine sugar and 4 cups of water. Heat over medium heat until the sugar is completely dissolved.

    Remove the pot from heat and stir in the vanilla extract, sarsaparilla root, wintergreen, licorice root, cinnamon, nutmeg, and coriander.

    Cool the Mixture

    Let the mixture cool to room temperature.

    Add Yeast

    Once cooled, sprinkle the yeast over the mixture and stir gently to combine. Cover the pot with a clean cloth.

    Fermentation

    Let the mixture sit at room temperature for 24-48 hours, allowing the yeast to ferment and carbonate the mixture.

    Strain and Bottle

    After fermentation, strain the mixture through a fine mesh sieve or cheesecloth to remove solids. Transfer the liquid to clean bottles, leaving some space at the top.

    Add Carbonated Water

    When ready to serve, mix the brewed root beer with carbonated water to taste.
