    Prepare the Crust

    Preheat your oven to 325°F (160°C). In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and allow to cool.

    Make the Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy.

    Add Remaining Ingredients

    Add the sour cream, vanilla extract, and eggs (one at a time), mixing on low speed until just combined. Be careful not to overmix.

    Bake the Cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake for 60-70 minutes, or until the edges are set but the center is still slightly jiggly.

    Cool and Refrigerate

    Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.

    Once chilled, carefully remove the cheesecake from the springform pan. Slice and serve plain or with your favorite toppings.
