    Prepare the Gelatin

    In a small bowl, sprinkle gelatin over water and let it sit for about 5 minutes to bloom.

    Melt the Chocolates

    In three separate heatproof bowls, melt the dark, milk, and white chocolates using a double boiler or microwave. Let them cool slightly.

    Whip the Cream

    In a large mixing bowl, whip 400 ml of heavy cream until soft peaks form. Fold in the melted chocolates one at a time, ensuring each is fully incorporated.

    Prepare the Egg Mixture

    In another bowl, whisk the egg yolks and sugar until pale and creamy. Add vanilla extract and mix well.

    Combine Egg Mixture and Gelatin

    Heat the bloomed gelatin gently until dissolved and then mix into the egg mixture.

    Fold in the Chocolate Mixtures

    Divide the whipped cream mixture into three parts and fold in each part into the corresponding chocolate mixture (dark, milk, and white).

    Assemble the Cake

    In a springform pan, pour in the dark chocolate mousse first, followed by milk chocolate, and finally white chocolate. Smooth out each layer before adding the next.

    Chill the Cake

    Cover the cake with plastic wrap and refrigerate for at least 4-6 hours or overnight until set.

    Once set, carefully remove the springform pan and slice the mousse cake. Serve chilled.
