    Mashing

    In a large mash tun, combine the pale malt and caramel malt with 15 liters of water. Heat the mixture to 65°C (149°F) and maintain this temperature for 60 minutes to convert the starches to sugars.

    Sparging

    After mashing, sparge the grains with additional hot water to extract as much sugar as possible. Collect the wort in a kettle.

    Boiling

    Bring the wort to a boil and add the hops. Boil for 60 minutes, stirring occasionally.

    Cooling

    After boiling, cool the wort quickly using a wort chiller or an ice bath to below 25°C (77°F).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Add the lager yeast and seal with an airlock. Ferment at cool temperatures (around 10-12°C or 50-54°F) for 2-4 weeks.

    Bottling

    Once fermentation is complete, add priming sugar to the beer and bottle it. Allow to carbonate for 1-2 weeks at room temperature.
