    Cook the Macaroni

    In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux. Gradually whisk in the milk until smooth. Add the shredded cheddar cheese, salt, and black pepper, stirring until the cheese is melted and the sauce is thickened.

    Combine Macaroni and Cheese Sauce

    Add the cooked macaroni to the cheese sauce, mixing well to combine. Allow the mixture to cool completely.

    Form the Bites

    Once cooled, scoop out portions of the mac and cheese mixture and form into small balls (about 1 inch in diameter).

    Coat the Bites

    Prepare a breading station with two bowls: one with beaten eggs and another with bread crumbs. Dip each mac and cheese ball into the egg, then roll in the bread crumbs until fully coated.

    Fry the Bites

    In a deep pot, heat oil over medium-high heat. Once hot, carefully add the mac and cheese bites in batches. Fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
