Harvesting and Preparing Grapes
Select ripe grapes from the Niagara Wine Trail. Wash and destem them to prepare for fermentation.

Crushing Grapes
Crush the grapes to release their juice. You can use a wine press or do it manually.

Fermentation
Transfer the crushed grapes and juice into a fermentation vessel. Add the yeast and allow it to ferment for about 1-2 weeks at a controlled temperature.

Pressing
After fermentation, press the mixture to separate the liquid from the solids. Collect the liquid in a clean container.

Distillation
Distill the collected liquid using a pot still or column still to produce the vodka. Collect the distillate in separate fractions.

Dilution
Dilute the distilled vodka with the measured water to achieve the desired alcohol content.

Bottling
Bottle the vodka in clean, sterilized bottles. Seal and label appropriately.
