Method

Distillation Process

    Prepare the Grains

    Begin by mashing the grains in warm water (around 65°C) for about an hour to convert the starches into fermentable sugars. Stir occasionally.

    Fermentation

    Once mashing is done, cool the mixture to room temperature, add the yeast, and allow it to ferment for about 5-7 days in a warm, dark place until bubbling stops.

    Prepare Botanicals

    While the fermentation is taking place, prepare the local botanicals by lightly crushing them to release their flavors.

    Distillation

    Transfer the fermented mixture to a still, add the prepared botanicals, and distill slowly. Collect the distillate, keeping the heart cut (the best quality liquid).

    Infusion with Grapes

    Add the Niagara Wine Trail grapes to the distillate and let it infuse for a couple of days to enhance the flavor profile.

    Bottling

    After infusion, filter the gin to remove solids and bottle it in sterilized glass bottles. Seal tightly and store in a cool, dark place.
