Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine granola, melted butter, and sugar. Mix until well combined. Press the mixture evenly into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then remove from the oven and let cool.
- 2
Make the Filling
In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and well blended.
- 3
Assemble the Pie
Pour the filling into the cooled granola crust. Spread it evenly and smooth the top.
- 4
Bake the Pie
Bake the pie in the preheated oven for about 15 minutes, or until the filling is set but still slightly jiggly in the center. Remove from oven and let it cool to room temperature.
- 5
Chill and Serve
Refrigerate the pie for at least 3 hours before serving. Garnish with whipped cream if desired.
