    Prepare the Burger

    In a mixing bowl, combine the ground brisket and ground chuck. Season with salt and black pepper. Form the mixture into a patty (about 8oz).

    Cook the Burger

    Heat a skillet over medium-high heat and add olive oil. Cook the burger patty for about 4-5 minutes on each side or until desired doneness is reached.

    Add the Cheese and Chiles

    During the last minute of cooking, place the pepper jack cheese on the burger and add the diced green chiles on top. Cover the skillet to melt the cheese.

    Fry the Egg

    In a separate pan, fry the egg sunny-side up until the whites are set but the yolk is still runny.

    Assemble the Burger

    Place the cooked burger on the bottom half of the brioche bun. Top with the sunny-side up egg. Serve open-faced with the top half of the bun on the side.
