Prepare the Potatoes
Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl of cold water to remove excess starch. Let them soak for about 10 minutes.

Drain and Dry
After soaking, drain the potatoes and place them on a clean kitchen towel. Squeeze out as much moisture as possible.

Prepare the Onion
Finely chop the onion and set it aside.

Combine Ingredients
In a large bowl, mix the grated potatoes, chopped onion, salt, and black pepper until well combined.

Heat Oil or Butter
In a large skillet, heat the olive oil or butter over medium-high heat.

Cook the Hash Browns
Once the oil is hot, add the potato mixture in an even layer. Press down gently with a spatula. Cook for about 5-7 minutes until the bottom is golden brown. Flip the hash browns and cook for another 5-7 minutes until both sides are crispy and golden.

Remove the hash browns from the skillet and drain on paper towels. Serve hot with your favorite toppings.
