Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash and peel the Russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

Season the Fries
In a large bowl, toss the cut fries with olive oil, garlic powder, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Parmesan and Parsley
Once the fries are done, remove them from the oven and immediately sprinkle grated Parmesan cheese over the hot fries. Toss gently to combine. Garnish with fresh parsley before serving.
