    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Rinse the potato strips in cold water to remove excess starch, then pat them dry with a paper towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until the fries are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and transfer them to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and pepper to taste.
