    Prepare the Ingredients

    In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined. Set aside.

    Sauté the Vegetables and Ham

    In a hot skillet over medium heat, add olive oil or butter. Sauté the diced onion and bell pepper until they are soft, about 3-4 minutes. Add the diced ham and cook for an additional 2 minutes.

    Cook the Omelet

    Pour the egg mixture over the sautéed ingredients in the skillet. Cook on medium heat until the edges begin to set, about 2-3 minutes. Using a spatula, gently lift the edges and let the uncooked egg flow underneath.

    Add Cheese and Finish Cooking

    Once the omelet is mostly set but still slightly runny on top, sprinkle the shredded cheddar cheese over one half of the omelet. Fold the other half over the cheese and cook for another 1-2 minutes until the cheese has melted and the omelet is cooked through.

    Serve

    Carefully slide the omelet onto a plate and serve hot with a side of salsa.
