    Prepare the Ingredients

    Shred the cooked chicken and dice the celery. Set aside.

    Mix the Omelet Filling

    In a bowl, whisk together the eggs and wing sauce until well combined. Stir in the shredded chicken, diced celery, shredded cheddar cheese, and bleu cheese.

    Cook the Omelet

    Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook until the edges begin to set. Gently lift the edges with a spatula, allowing uncooked egg to flow underneath.

    Once the omelet is mostly set but still slightly runny on top, carefully fold it in half. Cook for another minute or until fully set.
