Preparation

Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

Make the Batter
In a large bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Gradually add cold water, whisking until the batter is smooth.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Bread and Fry the Cauliflower
Dip each cauliflower floret into the batter, allowing excess to drip off. Carefully place the battered florets into the hot oil, frying in batches until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

Toss in Sauce (Optional)
If desired, toss the hot cauliflower wing bites in your choice of Anchor Bar Sauce.

Serve the cauliflower wing bites hot with bleu cheese dressing on the side.
