Cook the Beef
Preheat your oven to 325°F (163°C). Season the beef roast generously with kosher salt and sear it in a hot skillet until browned on all sides. Transfer the roast to a roasting pan and cook in the oven for about 1.5 to 2 hours or until it reaches your desired doneness (medium rare is recommended at 135°F/57°C).

Prepare the Kimmelweck Rolls
While the beef is roasting, prepare the kimmelweck rolls. Brush the tops of the rolls with water, then sprinkle with caraway seeds and a light dusting of coarse salt. Bake according to package instructions or until golden brown.

Slice the Beef
Once the roast is done, remove it from the oven and let it rest for 15 minutes. Slice the beef thinly against the grain.

Assemble the Sandwiches
To assemble, dip the bottom of each kimmelweck roll in the warm beef broth briefly, then layer the sliced roast beef on top. Add a generous dollop of prepared horseradish before placing the top half of the roll on.

Serve the beef on weck sandwiches with a side of macaroni salad and additional horseradish.
