    Prepare the apples

    Wash and core the apples, then chop them into quarters. Place them in a large pot.

    Add water and spices

    Pour the water over the chopped apples. Add the cinnamon sticks, whole cloves, and grated nutmeg.

    Simmer the mixture

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat and let it simmer for about 1 hour, stirring occasionally.

    Mash and strain

    After an hour, mash the apple mixture with a potato masher to release more juice. Then, strain the mixture through a fine mesh strainer or cheesecloth into another pot, discarding the solids.

    Add the sugar and lemon juice to the strained cider and stir until the sugar is fully dissolved. Taste and adjust sweetness if necessary.
