    Prepare the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the diced potatoes and cook for another 5-7 minutes, until they begin to soften.

    Add the Mushrooms

    Stir in the wild mushrooms and cook for an additional 5-7 minutes until they are tender and any moisture has evaporated.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Cook on medium-low heat for about 8-10 minutes, or until the edges begin to set. Use a spatula to gently lift the edges, allowing uncooked egg to flow underneath.

    Add Goat Cheese

    Sprinkle the crumbled goat cheese over the top of the frittata. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for an additional 10-15 minutes, or until the center is set.

    Serve

    Remove from the oven and let cool slightly. Slice into wedges and serve warm, garnished with vinaigrette-tossed arugula on top.
