    Prepare the Home Fries

    Dice the potatoes into small cubes and rinse them under cold water. Heat olive oil in a large skillet over medium-high heat and add the diced potatoes. Season with salt, black pepper, and paprika. Cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes.

    Cook the Sirloin

    Season the center-cut prime sirloin with salt and black pepper. Heat a grill or skillet over high heat and sear the steak for about 4-5 minutes on each side for medium-rare, depending on thickness. Let it rest for a few minutes before slicing.

    Poach the Eggs

    In a pot of simmering water, crack the eggs carefully into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.
