Strawberry Curls Base

Prepare strawberries
Wash and hull the strawberries. Reserve 4 whole medium strawberries for thin slicing to make decorative curls; pat the rest dry and roughly chop to measure 1.5 cups.

Place the chopped strawberries in a small bowl with 2 tablespoons granulated sugar, 1 teaspoon lemon juice, and 2 tablespoons cold water. Stir to combine and let macerate at room temperature for 10–15 minutes until the berries release some juices.

If you prefer a smoother texture, press the purée through a fine-mesh sieve into a bowl using the back of a spoon. Chill the purée while you prepare the creamy layer (about 10 minutes).
Creamy Layer

In a medium bowl, beat 1/2 cup softened mascarpone (or cream cheese) with 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract until smooth and slightly fluffy.

In a separate small chilled bowl, whip 3 tablespoons cold heavy cream until soft peaks form (about 1–2 minutes with a hand mixer). Fold the whipped cream gently into the mascarpone mixture until fully combined and airy. Taste and adjust sweetness with a little more powdered sugar if desired.

Transfer the creamy mixture to a piping bag fitted with a medium round or star tip (or use a zip-top bag with a corner snipped) for easy assembly.

If serving with cookies, place 8 mini cookies on a serving plate as bases (optional). Spoon or pipe a small dollop (about 1 tablespoon) of the creamy mixture onto each cookie or into small serving glasses to create a stable base.

Spoon 1–2 tablespoons of the chilled strawberry purée over or beside the creamy dollop, creating a vivid red layer or streak. For layered shooters, alternate cream and purée to create 2 layers (about 2 small layers each).

Make strawberry curls
Take the 4 reserved whole strawberries and slice them paper-thin lengthwise using a very sharp knife or a vegetable peeler. Working with one thin slice at a time, gently roll the slice from one end to the other to form a curl/rose. If slices tear, overlap two thin slices slightly and roll. Place one curl on top of each assembled serving.

Garnish each serving with a small mint leaf and a light sprinkle of lemon zest (about 1/8 teaspoon per serving). If desired, drizzle a scant 1/2 teaspoon of any remaining strawberry purée over the curl for shine.

Serve immediately at cool room temperature or chill for up to 30 minutes before serving. If storing longer, refrigerate up to 6 hours; assemble curls just before serving to keep them crisp.
