Prep

    Bring to temperature

    Remove the A5 Wagyu from the refrigerator at least 30–45 minutes before cooking so it comes closer to room temperature (this ensures even cooking). Pat each 3 oz portion dry very thoroughly with paper towels to remove surface moisture.

    Season

    Lightly brush or rub each steak with the neutral oil on both sides (this helps with searing). Season sparingly with kosher or flaky sea salt and freshly ground black pepper right before cooking. With highly marbled A5 Wagyu, minimal seasoning is preferred to let the beef flavor shine.

Cooking

    Preheat pan

    Place a heavy cast-iron skillet or stainless-steel pan over medium-high to high heat. Let the pan heat thoroughly until very hot and just beginning to smoke in spots (about 3–5 minutes).

    Sear the Wagyu

    Add the 1 tsp neutral oil to the hot pan and swirl to coat. Carefully place the 3 oz Wagyu portions in the pan with space between them (do not crowd). Sear undisturbed for 30–45 seconds on the first side for a deep, caramelized crust. Flip and sear the other side 30–45 seconds. Because these are small, very-marbled portions, total cook time will be short — aim for rare to medium-rare interior. If portions are thicker (over ~3/4 inch), increase each side by 15–30 seconds and watch closely.

    Finish with butter & aromatics

    Reduce heat to medium-low, add 1 tbsp unsalted butter, the lightly crushed garlic clove, and the thyme sprig to the pan. Tilt the pan and spoon (baste) the melted butter over the steaks for 15–30 seconds to add flavor and gloss. Remove steaks from the pan and transfer to a warm plate or resting surface.

    Rest

    Let the Wagyu rest 2–3 minutes (short rest because portions are small) so juices redistribute. Do not over-rest or the crust will cool.

Service

    Slice: For presentation, you may slice each 3 oz portion crosswise into 1/4-inch slices or serve whole. Sprinkle a light pinch of flaky sea salt if desired.

    Accompaniments: Serve with a small dab (about 1/2 tsp) of yuzu kosho or wasabi and a few drops of ponzu or light soy sauce on the side for dipping. Offer steamed short-grain rice, pickled ginger, and microgreens as optional accompaniments.

    Temperature note: A5 Wagyu is prized for its buttery texture and flavor—aim to serve it rare to medium-rare. Overcooking will render out the intramuscular fat and reduce the unique mouthfeel.
