Prepare the Filling
In a pan over medium heat, sauté the spinach until wilted. Allow it to cool slightly, then chop finely. In a bowl, combine the chopped spinach, ricotta cheese, salt, pepper, and nutmeg. Mix well and set aside.

Make the Dough
On a clean surface, form a mound with the flour and create a well in the center. Add the eggs and salt into the well. Gradually combine the flour with the eggs using a fork until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough
Divide the rested dough into four pieces. Roll out each piece as thinly as possible using a pasta machine or a rolling pin. Cut into circles using a cookie cutter or a glass.

Fill the Ravioli
Place a small spoonful of the filling onto the center of half the circles. Moisten the edges with water, then place another circle of dough on top. Press to seal, ensuring there are no air pockets.

Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes until they float. Remove them with a slotted spoon and set aside.

Serve
Toss the cooked ravioli in the brown butter sauce. Serve immediately, garnished with grated Parmesan cheese and a sprinkle of freshly cracked black pepper.
