In a large bowl, whisk together the flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, one tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.

In another bowl, combine the sliced apples, lemon juice, cinnamon, vanilla extract, and brown sugar. Toss to coat the apples evenly.

Preheat the oven to 425°F (220°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet. Place the apple mixture in the center, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating as necessary.
