    Prepare the Dough

    In a large bowl, mix the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 1 hour.

    Prepare the Filling

    While the dough is chilling, prepare the apple filling. Peel, core, and slice the apples. In a bowl, toss the sliced apples with sugar, cinnamon, and lemon juice. Set aside to let the flavors meld.

    Roll Out the Dough

    Preheat the oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.

    Assemble the Crostata

    Place the apple filling in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating it to create a rustic look.
