In a bowl, beat 3 large eggs with 2 tablespoons milk, 0.25 teaspoon salt, and 0.25 teaspoon black pepper until fully combined and slightly frothy.

Heat a nonstick skillet over medium heat and melt 1 tablespoon butter, swirling to coat the surface.

Add 0.25 cup diced onion and 0.5 cup diced bell pepper; sauté 3–4 minutes until vegetables are softened and slightly caramelized.

Stir in 0.5 cup diced ham and cook 1–2 minutes to warm through.

Pour the beaten eggs over the vegetables and ham. Let sit briefly, then gently lift the edges with a spatula to allow uncooked egg to flow underneath.

When the eggs are mostly set but still a touch runny on top, sprinkle 0.5 cup shredded cheddar cheese over half of the omelette.

Fold the omelette in half over the cheese, cook 1–2 more minutes, then slide onto a plate.
