1. Step 1: Make the chicken salad
In a large bowl, combine the 2 cups cooked chicken, 0.5 cup mayonnaise, 0.5 cup celery, 0.25 cup red onion, 2 tablespoons dill pickles, 1 tablespoon lemon juice, 1 tablespoon fresh parsley, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Mix until well coated and creamy. If desired, taste and adjust with more salt or lemon.
2. Step 2: Chill the filling
Cover and refrigerate the chicken salad for 15–20 minutes to let flavors meld.
3. Step 3: Toast the bread
Lightly butter 8 slices of bread (about 1 tablespoon total) and toast in a skillet or toaster until golden.
4. Step 4: Assemble the sandwiches
Lay 4 lettuce leaves on the toasted bread slices. Spoon an even amount of the chicken salad onto 4 slices, then top with the remaining bread slices to form 4 sandwiches.
5. Step 5: Serve
Cut sandwiches in half diagonally and serve immediately. Optional: serve with tomato slices or extra pickles on the side.
