1. Cook the bacon

Place bacon slices in a cold skillet. Turn the heat to medium and cook until crispy and browned, about 6–8 minutes, turning once. Transfer to paper towels to drain excess fat.

2. Toast the bread

In the same skillet or in a toaster, toast the two slices of bread until golden and lightly crisp. If using butter, spread a light layer of butter on toast after toasting.

3. Cook the eggs

Pour off all but about 1–2 teaspoons of bacon fat. Crack in the two eggs. Cook sunny-side up or over-easy until whites are set and yolks reach your desired doneness. Season with salt and pepper.

4. Assemble the sandwich

Place a cheddar slice on one bread slice. Top with the crispy bacon, then add the fried eggs. Cap with the other bread slice, cheese side down to help melt.

5. Serve

Finish by cutting the sandwich in half if desired. Serve immediately.
