BBQ Grilled Chicken Baker

Method

BBQ Grilled Chicken Baker

1

Preheat and prep

Preheat grill to medium-high (about 400-425°F / 205-220°C) or oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup if baking.

2

Make the rub

In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, cayenne pepper, ground black pepper, and kosher salt. Stir until evenly mixed.

3

Oil and season the fish

Pat tilapia fillets dry with paper towels. Lightly brush both sides with olive oil, then sprinkle and rub the spice mixture over both sides until evenly coated.

4

Apply BBQ glaze

Brush both sides of each fillet with barbecue sauce, reserving a few tablespoons for basting later.

5

Cook the fish

If baking: place fillets on the prepared sheet and bake 8-10 minutes, or until the fish is opaque and flakes easily with a fork. If grilling: grill 3-4 minutes per side, basting with the remaining BBQ sauce during the last minute of cook time.

6

Finish and serve

Remove from heat, optionally squeeze a lemon over the fillets and serve with lemon slices on the side. Let rest 1-2 minutes before serving.
