Prep the bulgur and herbs
1. Hydrate bulgur
Place the bulgur in a large bowl and add 1.25 cups cold water. Let soak for 15-20 minutes until tender and all liquid is absorbed. Drain any excess water if needed.
2. Wash and dry herbs
Rinse parsley and mint thoroughly and pat dry.
Chop vegetables
3. Finely chop parsley until you have about 4 cups packed.
4. Finely chop fresh mint until you have about 1 cup.
5. Dice tomatoes into small cubes to yield about 2 cups.
6. Dice cucumber into small cubes to yield about 1 cup.
7. Finely slice green onions to yield about 1/2 cup.
Make dressing
8. Whisk together lemon juice (4 tablespoons), olive oil (3 tablespoons), salt (1 teaspoon), and pepper (1/2 teaspoon) in a small bowl.
Combine and finish
9. In a large serving bowl, combine the drained bulgur, chopped parsley, chopped mint, tomatoes, cucumber, and green onions.
10. Pour dressing over the salad and toss well to combine. Adjust seasoning with additional salt or lemon juice if desired.
11. Chill for 15-30 minutes for flavors to meld (optional) and serve.
