    Soak skewers

    If using wooden skewers, soak them in water for 20-30 minutes to prevent burning on the grill.

    Make the marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika (if using), salt, and black pepper until well combined.

    Prepare vegetables

    Rinse all vegetables. Slice red and yellow bell peppers into 1-inch pieces. Cut zucchini into 1/2-inch thick rounds. Cut red onion into 1-inch wedges. Trim mushrooms if needed.

    Toss vegetables with marinade

    In a large bowl, add the peppers, zucchini, onion, mushrooms, and cherry tomatoes. Pour over half of the marinade and toss until vegetables are evenly coated. Reserve the remaining marinade for brushing.

    Assemble kebabs

    Thread the vegetables onto skewers, alternating colors and types (pepper, onion, mushroom, tomato, zucchini, etc.). Do not overcrowd the skewers.

    Preheat a grill to medium-high heat. Brush the skewers with the remaining marinade. Grill for 8-10 minutes, turning occasionally, until vegetables are tender and lightly charred.

    Transfer to a platter. Sprinkle with chopped parsley and season with extra salt and pepper to taste if desired. Serve warm.
