    Pat the fish fillets dry with paper towels and season both sides with salt and black pepper.

    Heat a large skillet over medium-high heat and add the olive oil. When shimmering, add two fillets (or more if your skillet allows) and cook 2-3 minutes per side until golden and just cooked through. Transfer to a plate and tent with foil to keep warm. Repeat with remaining fillets.

    In the same skillet, reduce heat to medium. Add the butter and allow it to melt. Stir in the minced garlic and cook for about 30 seconds, until fragrant.

    Add the lemon juice, white wine, and lemon zest to the pan. Scrape up any browned bits and simmer for 2-3 minutes until the sauce reduces slightly.

    Stir in the capers and simmer for another 30 seconds. Return the fish to the pan, spoon the sauce over the fillets, and cook 1-2 minutes to reheat and finish cooking the fish.

    Sprinkle with chopped parsley, adjust seasoning with salt and pepper if needed, and serve immediately with lemon wedges.
