    Prepare and season steaks

    Pat steaks dry with paper towels. Sprinkle evenly with kosher salt (1.5 tsp) on both sides and coarse ground black pepper (1 tsp). Let rest at room temperature for 15-20 minutes to take the chill off.

    Preheat skillet and oil

    Heat a heavy skillet (cast iron preferred) over high heat until very hot and lightly smoking. Add olive oil (1 tbsp) and swirl to coat the surface.

    Sear steaks

    Carefully place steaks in the hot pan. Sear without moving for 2-3 minutes until a deep crust forms. Flip and sear the other side 2-3 minutes for medium-rare; adjust time for desired doneness.

    Baste with butter and aromatics

    Reduce heat to medium-high. Add butter (2 tbsp), smashed garlic (3 cloves), and thyme (2 sprigs) to the pan. Tilt the pan and baste the steaks with the melted butter 1-2 minutes per side to infuse flavor.

    Deglaze and finish the sauce

    Pour in beef stock (0.25 cup) to deglaze, scraping up browned bits. Simmer 1-2 minutes to slightly reduce. Optional: swirl in a bit more butter for gloss and richness.

    Rest and serve

    Transfer steaks to a cutting board and rest 5-10 minutes to reabsorb juices. Slice or serve whole with pan sauce spooned over.
