    Season the steak

    Pat the ribeye steak slices dry. Season with 1 tsp salt, 0.5 tsp black pepper, and 1 clove minced garlic. Drizzle with 1 tsp olive oil and toss to coat evenly.

    Sear the steak

    Heat a large skillet over medium-high heat. Add 1 tbsp olive oil if needed. Sear the steak in a single layer until browned, about 2-3 minutes. Remove from pan and set aside.

    Sauté onions and peppers

    In the same skillet, add 2 tbsp butter and the sliced onion and green bell pepper. Season with a pinch of salt. Cook until softened and caramelized, about 5-7 minutes.

    Combine steak with vegetables

    Return the steak to the skillet with the onions and peppers. Stir to rewarm and combine flavors.

    Toast the rolls

    Slice the hoagie rolls open. Butter the insides with the remaining butter and toast in a dry skillet or under the broiler until golden and crisp.

    Assemble the sandwich

    Place 3-4 slices of provolone on each bottom roll. Top with the hot steak and pepper-onion mixture. Cover with the remaining cheese slices and the top half of the rolls.

    Melt cheese and serve

    If needed, place the assembled sandwiches back in the skillet or under the broiler for 1-2 minutes until the cheese melts and the bread is hot.
