    Position a rack in the center of the oven and preheat to 325°F (165°C). Lightly grease a 9-inch springform pan.

    Make crust

    In a bowl, combine Graham cracker crumbs and Granulated sugar (crust) until evenly mixed. Stir in unsalted butter, melted (5 tbsp) until the mixture resembles wet sand. Press the crust firmly into the bottom and about 1 inch up the sides of the pan. Refrigerate the crust for 15 minutes to set.

    Prepare filling base

    In a large mixing bowl, beat the softened Cream cheese, until smooth and creamy, about 2–3 minutes.

    Sweeten filling

    Add Granulated sugar (filling) 1 cup to the cream cheese gradually, beating after each addition until fully incorporated and smooth.

    Add sour cream

    Beat in Sour cream until the filling is light and creamy.

    Incorporate eggs

    Add Eggs one at a time, beating on low speed after each addition just until blended. Do not overmix to avoid cracks.

    Flavor and balance

    Stir in Vanilla extract, Lemon zest, and Salt until evenly distributed.

    Bake and relax

    Pour the filling over the crust. Bake at 325°F (165°C) for 50–60 minutes, until the center is slightly set but still a bit jiggle. If the edges brown too quickly, tent with foil.

    Cool and chill

    Let the cheesecake cool in the pan on a rack for 1 hour, then refrigerate at least 4 hours or preferably overnight before slicing.
