    Namura batter prep

    Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish. In a large bowl, whisk together the semolina, flour, granulated sugar (for batter), baking powder, and salt. Stir in the desiccated coconut until evenly distributed.

    In a separate bowl, whisk the plain yogurt with the melted butter until the mixture is smooth and glossy.

    Pour the yogurt-butter mixture into the dry ingredients and mix until a thick batter forms. It should be slightly crumbly but come together when pressed.

    Transfer batter to the prepared dish. Smooth the surface and sprinkle the tops with slivered almonds.

    Bake in the preheated oven for 25–30 minutes, until the edges are golden and a toothpick inserted near the center comes out clean.

    Meanwhile, prepare the syrup: in a small saucepan, combine sugar (for syrup) and water. Bring to a gentle boil and simmer for 5–7 minutes until slightly thickened. Remove from heat and stir in lemon juice and orange blossom water.

    As soon as the cake comes out of the oven, pour the warm syrup evenly over the hot cake. It will sizzle and absorb as it cools.

    Let the Namura cool completely to room temperature, then cut into diamonds or squares. Serve as is or with a dollop of cream or yogurt.
