    Pat the mahi-mahi fillets dry with paper towels. Season both sides with salt and black pepper.

    Heat a large skillet over medium-high heat and add olive oil. When shimmering, place the mahi-mahi fillets in the pan. Sear for 3-4 minutes on the first side, then flip and cook an additional 3-4 minutes until opaque and lightly browned. Remove from pan and rest warm.

    In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté for 30-45 seconds until fragrant.

    Pour in lemon juice and add capers to the pan, scraping up any browned bits. Simmer for 1-2 minutes to blend flavors.

    Return the mahi-mahi to the pan, spoon the lemon-butter sauce over the fillets, and cook for another 1-2 minutes to rewarm the fish and finish cooking.

    Taste and adjust seasoning with additional salt and pepper if needed. Remove from heat.
