Method
Gyro Pronto
- 1
Marinate the chicken
In a bowl, whisk together olive oil, garlic powder, ground cumin, smoked paprika, dried oregano, salt, pepper, and 2 tablespoons lemon juice. Add the thinly sliced chicken, toss to coat, and let marinate for 15–20 minutes.
- 2
Make tzatziki
In a separate bowl, combine the plain Greek yogurt, grated cucumber (drained), minced garlic, 1 tablespoon lemon juice, and chopped dill. Season with 1/4 teaspoon salt. Mix well and refrigerate at least 15 minutes.
- 3
Prepare toppings and pita
Warm pita bread in a dry skillet or oven until pliable. Arrange romaine lettuce leaves, dice tomatoes, and thinly slice red onion.
- 4
Cook the chicken
Heat a large skillet over medium-high heat. Cook the marinated chicken for 4–6 minutes per side until cooked through and lightly charred. Remove from heat and let rest 5 minutes, then slice into strips.
- 5
Assemble
Spread tzatziki on each pita, top with chicken and vegetables (lettuce, tomatoes, onion). Roll into a wrap, cut in half, and serve immediately.
