    In a large bowl, combine ground lamb or beef, finely chopped onion, parsley, minced garlic, cumin, coriander, cinnamon, paprika, salt, pepper, breadcrumbs, and egg. Mix gently with hands until just combined; avoid overworking the meat.

    Let the mixture rest covered in the refrigerator for 15-30 minutes to firm up and allow flavors to meld.

    Shape patties

    Divide the mixture into 4 equal portions and shape each into an oblong patty about 1/2 inch thick.

    Preheat cooking surface

    Preheat a grill or skillet over medium-high heat. Lightly brush with olive oil to prevent sticking.
