Prep
Preheat the oven to 425°F (220°C). Line a baking sheet with a rack and lightly oil or spray it for nonstick.

Dry-wet wing prep
Pat the chicken wings dry with paper towels. In a large bowl, whisk 2 tablespoons baking powder, 2 teaspoons kosher salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon paprika, and 0.5 teaspoon cayenne. Toss the wings with 1 tablespoon neutral oil to coat, then sprinkle the dry rub over and toss to coat evenly.

Bake
Arrange the wings on the rack in a single layer. Bake for 25–30 minutes, then flip and bake 20–25 minutes more until the skin is crisp and the internal temperature reaches 165°F (74°C).
Buffalo Sauce

Melt and mix sauce
In a small saucepan over medium heat, melt 0.5 cup unsalted butter. Whisk in 0.5 cup hot sauce, 1 teaspoon white vinegar, 0.5 teaspoon garlic powder, and 0.25 teaspoon salt. Simmer 1–2 minutes until smooth.

Coat wings
Transfer the baked wings to a large bowl, pour in the buffalo sauce, and toss to coat evenly.
