    Prep and rinse

    If using canned chickpeas, drain and rinse them under cold water. Reserve about 2 tablespoons of the aquafaba (the chickpea liquid) to adjust texture if needed.

    Blend base flavors

    In a food processor, add minced garlic, lemon juice, salt, and cumin. Pulse to combine. Then add tahini and blend until smooth and pale.

    Add chickpeas

    Add about half of the chickpeas to the processor and blend until a rough paste forms. Add the remaining chickpeas and blend again until the mixture becomes smooth.

    Emulsify with oil and water

    With the processor running, slowly drizzle in the olive oil and 60 ml water (adjust as needed) until the hummus is creamy and thick but pourable. Scrape down the sides as needed.

    Taste and adjust

    Taste the hummus and adjust salt or lemon juice as needed. If too thick, add a little more water; if too thin, add a bit more chickpeas or tahini.

    Serve

    Transfer to a serving bowl, drizzle with a small amount of olive oil, and serve with pita, vegetables, or flatbread.
