    Prepare the gyro meat

    In a large bowl, combine ground lamb, ground beef (if using), finely chopped onion, and 2 minced garlic cloves. Add oregano, cumin, smoked paprika, salt, and black pepper. Drizzle with olive oil and mix until evenly incorporated. Cover and let rest for 30 minutes to marry the flavors.

    Cook the gyro meat

    Preheat the oven to 200°C (400°F). Shape the seasoned meat into a tight loaf on a parchment-lined baking sheet. Bake for 25–30 minutes until browned and fully cooked. Slice thinly to resemble gyro slices.

    Make tzatziki

    In a bowl, combine Greek yogurt, grated cucumber (squeezed dry), one minced garlic clove, lemon juice, fresh dill, and a pinch of salt. Mix well and refrigerate for at least 15 minutes.

    Prep toppings and bread

    Shred romaine lettuce, dice tomatoes, and thinly slice red onion. Crumble feta. Warm pita breads in the oven wrapped in foil for 5–7 minutes or toast in a dry skillet until warmed and pliable.

    Cook fries

    If using frozen fries, bake according to package directions until crisp. If making from scratch, cut potatoes into fries, toss with a small amount of oil and salt, and bake at 220°C (425°F) for 25–30 minutes, flipping halfway.

    Assemble and serve

    Slice the gyro meat and layer into warmed pita with a generous spoon of tzatziki. Top with lettuce, tomatoes, red onion, and feta. Add a portion of fries on the side or inside the pita. Serve with lemon wedges.
