    Marinate the chicken

    In a large bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, ground cumin, paprika, salt, and black pepper. Add the chicken thighs and toss to coat. Cover and refrigerate for 30 minutes to 2 hours to let flavors meld.

    Skewer and rest

    Thread the marinated chicken onto metal or soaked wooden skewers. Let the skewered chicken rest at room temperature for 10–15 minutes before grilling.

Tzatziki

    In a bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, and salt. Mix well, then cover and refrigerate for at least 15 minutes to blend flavors.

Finish and Serve

    Grill the chicken

    Preheat grill or grill pan to medium-high. Grill skewers 4–6 minutes per side, until chicken is cooked through and lightly charred. Baste as needed with any remaining marinade.

    Warm the pita

    Warm pita breads on the grill for 1–2 minutes per side or in a dry skillet until pliable.

    Assemble the gyro: spread tzatziki on the warm pita, top with grilled chicken, sliced red onion and tomatoes, and crumbled feta (if using). Fold and serve immediately.
