BBQ Grilled Chicken Baker
- 1
In a large bowl, whisk together the buttermilk, hot sauce, garlic powder, paprika, kosher salt, and black pepper. Add the chicken thighs and refrigerate for 30 minutes to 2 hours to marinate.
- 2
In a separate shallow dish, whisk together the coating ingredients: flour, cornstarch, paprika, garlic powder, onion powder, baking powder, salt, and pepper.
- 3
Remove chicken from the marinade, letting excess buttermilk drip off. Dredge each piece in the flour coating, pressing gently to adhere. Place coated pieces on a rack to set for about 10 minutes.
- 4
Preheat the oven to 425°F (220°C). Prepare a baking sheet with a rack and lightly brush or spray with olive oil.
- 5
- 6
Bake the chicken for 40–50 minutes, turning once about halfway through, until the crust is golden and the internal temperature reaches 165°F (74°C).
- 7
Meanwhile, whisk together the BBQ sauce, honey, and apple cider vinegar in a small bowl to make the glaze.
- 8
During the last 5–7 minutes of baking, brush the glaze onto the chicken, then continue baking until the glaze sets. For extra crispiness, broil for 1–2 minutes at the end.
- 9
Remove from the oven and let rest 5 minutes. Garnish with sliced green onions and serve.
