BBQ Grilled Chicken Baker

    In a large bowl, whisk together the buttermilk, hot sauce, garlic powder, paprika, kosher salt, and black pepper. Add the chicken thighs and refrigerate for 30 minutes to 2 hours to marinate.

    In a separate shallow dish, whisk together the coating ingredients: flour, cornstarch, paprika, garlic powder, onion powder, baking powder, salt, and pepper.

    Remove chicken from the marinade, letting excess buttermilk drip off. Dredge each piece in the flour coating, pressing gently to adhere. Place coated pieces on a rack to set for about 10 minutes.

    Preheat the oven to 425°F (220°C). Prepare a baking sheet with a rack and lightly brush or spray with olive oil.

    Spray or brush the coated chicken pieces lightly with olive oil to help the crust crisp as they bake.

    Bake the chicken for 40–50 minutes, turning once about halfway through, until the crust is golden and the internal temperature reaches 165°F (74°C).
