Prepare potatoes
Rinse and scrub the Russet potatoes. Peel if desired, then cut into evenly sized sticks about 1/4 inch thick.

Soak to remove starch
Place the potato sticks in a large bowl and cover with 4 cups cold water. Let soak 20–30 minutes to remove surface starch.

Dry and coat
Drain potatoes well and pat completely dry with a clean towel. In a large bowl, toss the potatoes with cornstarch until lightly coated for extra crispiness.

Heat oil
Pour oil into a deep pot or fryer and heat to 320°F (160°C).

First fry (par-cook)
Fry the potatoes in batches for 4–5 minutes, until pale and nearly cooked through. Do not brown. Transfer to a rack to drain and rest.

Second fry (crisp)
Increase oil temperature to 375°F (190°C). Fry in batches again for 2–3 minutes, until golden and crisp. Drain on rack.

Season and serve
While hot, sprinkle with salt to taste and paprika. Toss to coat evenly and serve immediately.
