Chicken Skewer

Method

Chicken Skewer

  1. 1

    Prepare skewers and fish

If using wooden skewers, soak them in water for 20-30 minutes to prevent burning. Cut tilapia fillets into roughly 1.5-inch cubes and pat dry.

  2. 2

    Make the marinade

In a medium bowl, whisk together olive oil, lemon juice, minced garlic, paprika, ground cumin, chili flakes, salt, black pepper, and honey until well combined.

  3. 3

    Marinate fish

Add tilapia cubes to the marinade and toss to coat evenly. Allow to marinate for 20-30 minutes in the refrigerator.

  4. 4

    Prepare vegetables

Cut the red bell pepper and red onion into chunks roughly the same size as the fish cubes.

  5. 5

    Thread skewers

Thread tilapia chunks onto each skewer, alternating with pieces of red bell pepper and red onion as desired.

  6. 6

    Cook skewers

Preheat grill to medium-high heat or preheat broiler. Grill or broil skewers for about 6-8 minutes, turning once halfway, until fish is opaque and cooked through. If needed, brush with remaining marinade during the last minute.

  7. 7

    Rest and serve

Let skewers rest for 2-3 minutes off heat. Serve with lemon wedges and a side of greens or rice.
