Prepare the broth base

    Simmer aromatics and broth

    In a large pot, combine the fish stock, onion, shallots, garlic, lemongrass paste, and grated ginger. Bring to a gentle simmer over medium heat and cook 6-8 minutes to soften aromatics.

    Stir in turmeric, fish sauce, palm sugar, and red chili powder. Reduce heat to maintain a gentle simmer and let flavors meld for 8-10 minutes.

    Thicken with slurry

    Whisk in the rice flour slurry slowly while stirring to avoid lumps. Simmer another 2-3 minutes until the broth slightly thickens.

Finish, assemble, and serve

    Prepare noodles and fish

    If not already done, cook the rice vermicelli according to package directions until just tender. Drain and rinse with cool water to stop the cooking. Fold in shredded fish if desired, and keep warm in the broth on low heat.
